The Best Way to Cook a Baked Potato

Baked potatoes are probably one of the easiest things in the world to cook.  Ironically, no one seems to know how to do them properly!  They often end up rock hard, or far too mushy to enjoy.

Set your preconceptions about cooking baked potatoes aside and give this recipe a try. 

Serve with real butter for best results.  Although I like sour cream a lot, I'll recommend butter instead of sour cream for this specific recipe.

Ingredients

  • 1 large baking potato per person
  • Light olive oil
  • Kosher salt
Wash the potato, then dry it off with a paper towel.  Poke a few holes in it on both the top and the bottom with a fork.  Preheat your oven to 400 degrees and place a sheet of aluminum foil on the bottom rack.

Using a brush, paint the potato skins with olive oil, then sprinkle on a good amount of kosher salt.  DO NOT wrap your potatoes in foil.  Place them in the middle rack of the oven, over the foil that you placed on the bottom rack.  This will catch the drippings.

Bake for 1.5 to 2 hours.  The longer you bake, the crunchier the skins will be.  I go the full two hours; for softer skins, take them out of the oven at the 90 minute mark.
